Piña Colada with Health One Meal Replacement - an original recipe by Needless Pounds!

In response to my request for guests to send in non-alcoholic, low-cal drink recipes, my blog buddy Daniel from Needless Pounds came through with something AMAZING! Piña Colada made with Vanilla Health One Meal Replacement.  Oh my goodness!  It is yummy and refreshing.  


A little liberty was taken while mixing up Daniel's recipe - an addition of frozen pineapple chunks. Pineapple does add 22 calories - but the tropical flavor blends so naturally with the coconut I was willing to use 22 of my additive calories. NOTE: Dole brand has frozen pineapple in single serving containers (3 ounces - basically 1/2 cup).  There is no sugar added and no juice - only pineapple chunks. For this recipe I used half of a container (1/4 cup). This worked so well, I will definitely be buying a pineapple, cutting it up and freezing my own!

Meal Replacement - 160 calories
Additives - 32 calories ß these calories are from the "optional" ingredients



Ingredients:

  • 1 Vanilla Meal Replacement
  • 1/4 teaspoon coconut extract
  • 1 teaspoon Splenda
  • 1/4 cup pineapple (optional)
  • 1 cup crushed ice
  • 1 cup water
  • 1 tablespoon fat-free Cool Whip (optional)
  • 1 strawberry (optional)

Instructions:


  • Pour water, crushed ice, pineapple and coconut extract into a blender (I use the Bella Rocket Blender - it is a single serving blender)
  • Pour in meal replacement and Splenda
  • Blend until desired consistency.  I have found that the longer you blend, the thicker and creamier the shake



Presentation:


  • Pour into a pretty glass
  • Dollop a tablespoon of fat-free Cool Whip
  • Top with a strawberry
  • Pop in a straw
