Chik'n Empanada with Health One Meal Replacement

Well readers it has been awhile since I've offered up a new recipe. As often happens during the summertime - well anytime actually - our lives become busy. But earlier this week I came up with a recipe that I must admit...was amazing! Chik'n Empanada with Health One Meal Replacement. You may be asking, why is it spelled Chik'n vs Chicken. Well it's because I used Quorn brand Chik'n Tenders - they are a meat alternative and they are so good! Plus, 1/4 cup is only 20 calories - you can't beat that!

Calories - One Serving
Meal Replacement: 160 calories
Additives: 60 calories
Crust Ingredients:

  • 1 Potato Soup Meal Replacement
  • 1 tablespoon Jiffy Pizza Mix
  • 1/4 teaspoon Garlic Salt
  • 1/2 teaspoon Taco Seasoning
  • 2-3 tablespoons Hot Water
  • 1 tablespoon Flour (you won't actually use this much - it is for kneading and rolling out the dough)
  • Olive Oil Cooking Spray


Crust Directions:

  • Mix dry ingredients.
  • Slowly stir in hot water (you may need a little more or a little less).
  • Cover dough and let set for 5 minutes – this allows the yeast in the mix to activate.
  • Sprinkle flour onto a cutting board or other smooth surface.  Knead the dough a few times in the flour.  The gluten in the flour helps the dough to become more elastic.
  • Press or roll the dough to make a circle - approximately 6 inches.  Make certain to have flour underneath so that it doesn't stick.
  • Spray olive cooking oil spray onto a baking sheet.  I use parchment paper for easier clean up.
  • Slide the dough onto the baking sheet.

Filling Ingredients:

  • 1/4 cup Quorn Chik'n Tenders - you may use another brand or real chicken. Just be sure to adjust the additive calories. Remember, Quorn Chik'n Tenders are 20 calories for 1/4 cup.
  • 1.5 teaspoons Taco Seasoning
  • 1 tablespoon Fat Free Cheddar Cheese


Filling Instructions:

  • Thaw the Chik'n Tenders.
  • Cut the Chik'n Tenders into smaller pieces.
  • Stir in the Taco Seasoning to coat the Chik'n Tenders.
  • Stir in the Fat Free Cheddar Cheese.
  • Mix filling ingredients.
  • Place the filling on 1/2 of the dough round - leaving room to seal the dough around the edge.
  • Take a drop or two of water and with your finger run it around the edge of the dough.

  • Carefully fold the dough over the top of the filling - if it tears a bit, just press it together again.
  • Crimp edges. If you use a fork, press gently.
  • Bake at 350 degrees for 15 minutes.

Rainbow Swiss Chard Braid with Health One Meal Replacement

Mary, Mary quite contrary, how does your garden grow? Very well thanks! I have been harvesting lettuce and spinach for awhile now from my edible landscapeMy tomatoes are set on the vine. They are still green and small, with the largest measuring 3 inches. There are a lot of blossoms on my peas and a few pods. My cucumber plant is HUGE but no blossoms yet. Since I planted my cucumber a bit late and sowed seed directly into the ground, I'm not too surprised. 

Tonight's harvest was Rainbow Swiss Chard, with it's festive stems of orange, pink, yellow and red. The leaves are not the size you would buy in the store; but, I keep thinning the smaller leaves to give the others room to grow. So that's what we're using tonight...baby Rainbow Swiss Chard, Blue Cheese and Health One Meal Replacement!

Calories - One Serving
Meal Replacement - 160 calories
Additives - 70 calories

Crust Ingredients:
  • 1 Potato Soup Meal Replacement
  • 1 tablespoon Jiffy Pizza Mix

  • 1 tablespoon Flour (you won't actually use this much - it is for kneading and rolling out the dough)
  • Olive Oil Cooking Spray

  • Slowly stir in hot water (you may need a little more or a little less).
  • Cover dough and let set for 5 minutes – this allows the yeast in the mix to activate.
  • Sprinkle flour onto a cutting board or other smooth surface.  
  • Knead the dough a few times in the flour.  The gluten in the flour helps the dough to become more elastic.
  • Gently roll the dough to about 6x8 inches on the cutting board.  Make certain to have flour on the rolling pin and underneath the dough so that it doesn't stick.
  • Spray Pam olive oil spray onto a baking sheet.  I use parchment paper for easier clean up.
  • Slide the dough onto the baking sheet.
  • Cut strips into each side of the dough. Make certain the you cut an even number on each side. Be sure to leave 2 inches in the middle uncut.
  • Spray the top of the dough with Pam olive oil spray.
Filling Ingredients:
  • Rainbow Swiss Chard Leaves - I used 4 baby leaves. You may also use a larger leaf and cut it up. In fact, the next time I make this, I will be cutting up the Swiss Chard so that I may fit a bit more into the braid.
  • Onion Slivers - if chopped, this would be about 1 tablespoon of onion.
  • 1 tablespoon Reduced Fat Blue Cheese - the blue cheese adds a real "bite." If blue cheese isn't your thing...then use Parmesan or Mozzarella. Be sure to adjust the calories - 1 tablespoon of Reduced Fat Blue Cheese = 20 calories.
Filling Directions:
  • Place Rainbow Swiss Chard in center of dough - I folded the baby leaves to fit.
  • Place Onion Slivers over the Swiss Chard.
  • Sprinkle the Reduced Fat Blue Cheese on top.
  • Starting at one end, fold the strips of dough over the filling. Have the strips overlap a bit so that it looks like a braid.
  • Spray top with Olive Oil Cooking Spray.
  • Bake at 350 degrees for 15 minutes.

Spice it up! Using, Preserving and Storing Herbs and Spices

Growing herbs became a part of my life a few years ago. But, for a long time I was hesitant to try anything different when it came to cooking. The basics for adding taste were: seasoning salt, garlic salt, regular salt and pepper. Oh and did I mention SALT? Of course there was cinnamon and vanilla for baking, but that was about it.

Over the years, I have become more creative with recipe ingredients. Using spices, herbs and extracts is an extension of that creativity! What great preparation for using Health One Meal Replacements as the base ingredient in my recipes. Being creative allows me to enjoy more than just "shakes."

So...you have decided to try something different. You've grown or bought some fresh basil for that new recipe Pizza Margherita. Lovely fresh basil that will soon turn to slime if you aren't able to use it fast enough. Your recipe turns out great; but, what to do with the rest of this basil? Believe it or not, storing fresh herbs is really easy.

To store fresh herbs, you can spend around $20 and purchase a Compact Herb Keeper by Cuisipro - which is a very nifty tool.  














Or you can do what I do and store your herbs in jars covered with a plastic bag. You just put a bit of water into a jar, snip the ends off of the herbs, put the herbs into the water and cover with a plastic bag. It will keep most herbs fresh for about 2 weeks. Just be sure to change the water periodically.

You may also dry herbs. I have dried herbs for the past few years. Throughout the summer I dry my herbs in small batches. It is more manageable that way. Also, I always wait till the weekend, so that I may pick the herbs in the morning when their oil content is at its highest. Drying herbs is so quick and easy! How? In the microwave of course! Here's the steps I follow!


  • First - make certain that you have the right tools. You will be using a plate that will get VERY HOT, so...you will want a microwave safe plate. You can't imagine how many ceramic plates I have cracked right down the middle when drying herbs. Finally, I invested in a Nordic Ware microwave plate. It still gets hot, but it won't break. You will also need paper towels.

  • Wash the herbs and pat dry with a towel. I use a flour sack towel so that I don't leave lint on the herbs. They do not need to be completely dry. 
  • Place a paper towel on the plate and fold under the corners. 
  • Spread the herbs on the plate in a single layer. 
  • Microwave the herbs for 1-3 minutes. There may be a little popping sound - this is normal. 
  • Stay with the herbs and watch through the window of the microwave. 
  • Check after one minute and then every 30 seconds. The herb is dried when it is brittle and breaks easily. 

CAUTION: I was drying thyme once and stepped away for just a moment...next thing I knew I had a little fire in my microwave...so don't leave your drying herbs unattended.

  • Allow the dried herbs to cool.
  • Place them in a jar for storage. I use canning jars to store the bulk of my herbs; and, smaller jars for regular use.

How do we care for our dried herbs, spices and extracts? First store them in a dark, cool place. This means not over the stove. And we need to remember that shelf life is so important.

Spices – ground – 2-3 years
Spices – whole – 3-4 years
Seasoning blends – 1-2 years
Herbs – 1-3 years
Extracts – 4 years (except pure vanilla, which lasts indefinitely - who knew?)

Spices are expensive, so you want to know what you have so that you will use them. Organization is the only solution that I have found.  The most wonderful product I have found to keep my spices organized is SpiceStor. Now I know what I have and even better - I can find it! Plus, it is so nice to be able to open my cupboard door and not have to dodge the spice jars falling out.

Now that we have all of these herbs and spices - what do we do with them?  The answer?  USE THEM!  Below is a herb and spice chart.  I have highlighted in green the herbs that I am currently growing.

Curry Powder

Fennel Seed

Garlic

Leaves are used fresh or dried, whole or ground; has a strong spicy smell and taste. If using dried tarragon leaves, remove them after cooking, since once dried they will not soften again when cooked.
Thyme
Use in poultry, poultry stuffing, pork, beef, tomatoes, tomato soups and sauces.
An herb used both fresh and dried, whole or ground. It has a strong, but pleasant flavor, resembling a blend of cloves and sage.
Turmeric
Use in curries, poultry, relishes, pickles, eggs, rice.
A member of the ginger family; an orange-yellow powder with a mild flavor.

Watergate Pie with Health One Meal Replacement

My sister loves Christmas. Everything about Christmas! She has even been known to celebrate Christmas in July! Growing up, we had many  favorite holiday foods. But in the early 1970's a new treat began to show up on tables across America. Watergate Salad!

Many of you may remember Watergate Salad as a food staple of holiday and family get-togethers. It was green, fluffy, pistachio flavored with marshmallows and pineapple. Honestly, I never knew why it was called a salad...since the only "salad" type thing in it was the pineapple. And Watergate? Who knows how it obtained that moniker. Maybe it was an effort to lighten the tone of the nation after the Watergate Scandal.  Whatever the reason for the name - I do know that I liked it...a lot! So, I thought I would try to make it using Health One Meal Replacement.

Here's to you Sis! Happy Christmas in July!

Two Servings
Calories per Serving:
Meal Replacement - 160 calories
Additives - 60 additives


Crust Ingredients:

  • 1 Vanilla Meal Replacement
  • 1 tablespoon Splenda
  • 2 teaspoons Flour
  • 1 tablespoon Butter Buds (liquid)


Crust Instructions:

  • Mix dry ingredients.
  • Blend in Butter Buds with a fork.
  • With your fingers - lightly work the ingredients till it becomes sandy (see picture above).
  • Press into pie pan - I used a medium sized pie pan approx. 7 inches across. 
  • Bake at 350 degrees for 5 minutes.
  • Cool.



Filling Ingredients:

  • 1 Vanilla Meal Replacement
  • 1 tablespoon Sugar-Free/Fat-Free Pistachio Pudding mix (dry)
  • 1/2 cup Cold Water
  • 1/2 cup Frozen Pineapple Tidbits (by Dole - they come in single-serving packages with no juice or added sugar)
  • 10 mini-marshmallows
  • 1/4 cup Fat-Free Whipped Topping

Filling Directions:

  • Mix Meal Replacement and Pistachio Pudding.
  • Blend in Water till smooth - I used a whisk.
  • Place pudding mixture in fridge to thicken.
  • Using kitchen scissors or a paring knife - cut Miniature Marshmallows and Pineapple Tidbits in half.
  • Mix Miniature Marshmallows and Pineapple Tidbits into pudding mixture.
  • Fold Whipped Topping into the pudding mixture.
  • Pour into crust.
  • Freeze.
  • To serve, remove from freezer and let set a few minutes before cutting.

NOTE: Because this recipe does not include regular whipped cream or milk, the consistency is not "fluffy" like regular Watergate Pudding. Freezing "sets" the filling.
