Swiss Chard Polenta Pie with Health One Meal Replacement

Rainbow Swiss Chard

Went grocery shopping the other day and saw the prettiest Rainbow Swiss Chard.  All of the stems were different colors:  pink, orange, yellow, purple!  They were so cheery.  Sooo...what could I make with them?  One of my favorite recipes using Swiss Chard is Polenta Pie from the Moosewood Restaurant Low Fat Favorites Cookbook.  This cookbook has some wonderful vegetarian recipes.  It will be a great resource when I am on maintenance.

In the meantime, the big question is:  could it be adapted using the Health One Potato Soup Meal Replacement?  The answer is a big YES!  And the exciting part - there are only 53 calories for additives.

This is such a yummy savory dish.  The polenta is so creamy and the fresh vegetables are a great way to welcome the growing season!  Vegetable growing season that is...J

Swiss Chard Polenta Pie







Meal Replacement - 160 calories
Additives - 53 calories


Polenta Ingredients

  • 1 Potato Soup Meal Replacement
  • 1 tablespoon cornmeal
  • 1 teaspoon of LIQUID Butter Buds ßthis is the Butter Buds that come in packages that are mixed with hot water – when mixed it is like melted butter.
  • 3/4 cups water
  • salt and pepper to taste
  • Olive Oil cooking spray

Polenta Intructions

  • Bring Water and Butter Buds to a boil
  • Slowly whisk in cornmeal
  • Slowly whisk in Potato Soup Meal Replacement
  • Reduce heat to medium
  • Continue stirring and cook for 3-5 minutes (the mixture will be thick and stiff)
  • Spoon into a small, shallow casserole dish that has been sprayed with Olive Oil cooking spray (I use an oval 15 ounce casserole dish) 

    Vegetable Topping Ingredients


    • 1 cup of chopped Swiss Chard (you may also use kale or spinach)
    • 1/4 cup sliced mushrooms
    • 1 tablespoon chopped onion
    • Sprinkle of garlic powder
    • Olive Oil cooking spray
    • salt and pepper to taste
    • 1 teaspoon parmesan cheese



    Vegetable Topping Instructions

    • Heat pan over medium heat
    • Spray with Olive Oil cooking spray
    • Stir fry onion till soft
    • Add mushrooms and stir fry till soft (you may need to add a bit of water)
    • Sprinkle with garlic powder, salt and pepper to taste
    • Add swiss chard and stir till cooked 
    • Spread vegetable topping over polenta
    • Sprinkle with parmesan
    • Bake at 400 degrees for 15 minutes
