The sun is shining. The air is warm and sweet. Summer is teasing us. She's not quite here, but she's definitely peaking out from behind the clouds! One of my favorite things during warm weather are frozen treats - especially fruit bars. You know the kind I'm talking about!
So the question is - can we make one using a Health One Meal Replacement? The answer is YES! Just be warned - these are so good and look so cute you may be asked to share. But isn't that part of the fun?

Calories per Serving
Meal Replacement - 40 calories
Additives - 17 calories
Ingredients:
- 1 Strawberry Meal Replacement
- 1/2 package (.3 ounce) sugar free Strawberry Gelatin (dry mix) NOTE: I use Walmart's Great Value brand - it has half the calories of Jello brand
- 1 Kiwi - peeled and sliced
- 3-4 Strawberries - sliced
- 1/2 cup boiling water
- 1/2 cup cold water
Instructions:
- Pour Strawberry Gelatin mix into a bowl
- Slowly pour boiling water into bowl
- Whisk till gelatin is dissolved
- Pour in cold water - whisk
- Whisk in Meal Replacement
- Set aside to cool
- Divide fruit equally and place fruit in ice pop molds (mine are West Bend Lickety Sip Pop Makers)
- Pour liquid into molds
- Place a knife down the side of the mold to ensure that there are no air pockets
- Add more liquid if needed - be sure to leave some headroom for the liquid to expand as it freezes
- Insert the handles into the mold
- Place the mold on an even surface in the freezer (I sat them on a plate in the freezer)
- Now be patient - this is the hardest part
- Wait 3-4 hours to ensure that the fruit and cream bar is completely frozen
- Remove from freezer and dip (don't sit) the mold in warm water - keep checking to see if you are able to remove the bar
- Remove the bars
- Place in individual plastic bags and store in the freezer
