Decadent Truffles with Health One Meal Replacement

Seize the day...


Family get-together tomorrow and my sister is bringing a dessert that I am confident will be absolutely sinful.  I won't be sharing in her cake; but, I will be able to enjoy a special treat...truffles!

These truffles are so yummy; but, the real treat is the experience.  Sometimes I get so busy and feel limited in my food choices that I just "eat" - but I don't take time to savor the experience.  Do you remember when the adults in our lives would tell us to "slow down and chew our food?"  They may have been on to something.

The next time you have a meal, slow down.  Be deliberate.  Turn off the television or cell phone or iPod or...whatever distracts you.  Put a pretty tablecloth or placement on the table.  Use a cloth napkin.  Since your serving size may be small, use a smaller plate so that your plate looks full of good things.

Now...sit down.  Take a moment to become aware of your surroundings:  the sights, the sounds, the smells, the tastes.  I know we're busy.  But set a goal to "be still" at least once a day.  Give yourself that moment to reflect on the positive choices you have been making.  You deserve it!

Decadent Truffles Calories

Meal Replacement - 160 calories
Additives - 10 calories

Ingredients


  • 1 package chocolate meal replacement
  • 2 teaspoons unsweetened cocoa
  • 1/4 teaspoon Splenda (this is optional - I really like dark chocolate, so I don't use any)
  • a drop of almond extract (you could use any flavoring:  vanilla, peppermint, orange, etc.)
  • Water
  • An extra teaspoon of unsweetened cocoa to roll the truffles in


Instructions

  • Mix dry ingredients
  • Add almond extract
  • Slowly add water - a teaspoon or two at a time.  This doesn't take a lot of water.  You will want the truffle mixture to be the consistency of stiff cookie dough.
  • Place the truffle mixture into the freezer for about 10 minutes.
  • Pull it out of the fridge and quickly roll into 1 inch balls (approximately 8 balls)
  • Put the balls back into the freezer for about 5 minutes.
  • Place a teaspoon of cocoa in a bowl.
  • Roll the balls into the cocoa.
There you have it - decadent truffles.
