Chocolate Macaroons with Health One Meal Replacement

Variety is the spice of life.  And, you know how I love to try new things.  But, we all have our favorites.  This is mine - Chocolate Macaroons!  These cookies are rich, soft and oh so yummy with "real" coconut!  I make them every week.

For me, to be successful and stay on program I have to plan ahead.  If I don't, the door opens wide to making poor food choices.  So, each Sunday afternoon I make up a batch (six servings) of Chocolate Macaroons.  Then they are bagged up two cookies per serving and tossed into the fridge. In the morning, they go into my bag and I have a wonderful mid-day meal or snack!  I'm pretty sure that Chocolate Macaroons will become one of your favorites too!


Chocolate Macaroons

Recipe makes 6 servings
Calories - 1 serving
Meal Replacement - 160 calories
Additives - 30 calories


Ingredients for Chocolate Dough


3 Chocolate Meal Replacements
3 tablespoons sugar-free chocolate pudding (dry)
1/4 cup unsweetened cocoa
1 tablespoon baking powder
1 teaspoon almond extract
Water

Ingredients for Coconut Dough

3 Vanilla Meal Replacements
1/4 cup unsweetened coconut
1 tablespoon baking powder
1 teaspoon coconut extract
Water



Instructions
  • Mix ingredients for chocolate dough and coconut dough in separate bowls.
  • Add water slowly to make a stiff dough.





  • Place parchment paper on cookie sheet.  If you do not have parchment paper, then spray the cookie sheet with cooking spray.
  • Drop heaping tablespoons of chocolate dough onto the cookie sheet - make certain that you have 12 cookies (two cookies per serving).  You may need to adjust the amount of dough you drop.
  • Drop a heaping tablespoon of coconut dough on top of the chocolate dough.








  • Bake at 350 degrees for 10-12 minutes.

  1. Those look insane! That's not always easy to get the lightly browned and crisped finish when you're baking with Health One. We'll have to try that one for sure. Btw, is your oven gas or electric?

  3. Hi Mary, I'm just starting out on the Health One program and have come to rely on your blog for amazing recipes... thank you! One question about this recipe. In one of the photos, it shows what looks to be a box of pudding mix, but it's not included in the list of ingredients... if so, how much do you use? Thanks so much!

  4. Oops! 2-3 tablespoons of dry chocolate pudding. This is primarily to keep them moist.
