Blueberry Lemon Shake with Health One Meal Replacement

Recent gum surgery has required me to be on a liquid diet for two weeks.  Lucky for me, that is no problem since Health One Meal Replacements are a regular part of my diet.  And if it has to be, the timing couldn't be better because...

SUMMER is the time for shakes!


Unique taste combinations are often my goal.  So when I experiment in the kitchen, my first question is always, "what do I have handy?"  With some blueberries from the freezer and some Sugar-Free/Fat-Free Lemon Pudding mix from the pantry, we will soon have a yummy shake!

Calories:  One Serving

Meal Replacement - 160 calories
Additives - 38 calories

Ingredients:


  • 1 Vanilla Meal Replacement
  • 1 tablespoon Sugar-Free and Fat-Free Lemon Pudding (dry mix)
  • 1/4 cup frozen blueberries
  • 1 cup crushed ice
  • 1 cup water (you may need to adjust this based on the size of your blender cup)



Instructions:


  • Pour water, crushed ice and blueberries into a blender (I use the Bella Rocket Blender - it is a single serving blender)
  • NOTE:  If you're using fresh blueberries, then toss them in the freezer first.  Frozen berries reduce the amount of ice needed, resulting in a richer shake.
  • Pour in meal replacement and pudding
  • Blend until desired consistency.  I have found that the longer you blend, the thicker and creamier the shake.

Presentation:


Pour into a pretty glass.  Drop a few berries on top.  Pop in a straw.
