Tomato Galette with Health One Meal Replacement

What is a "Galette?" Galette (pronounced GA-LET) is a French term that typically refers to a free-form rustic tart made with a pastry dough of some kind. The filling of a galette may be sweet or savory. Today's will be savory! I can hardly wait to try this later in the summer with my very own home-grown tomatoes...but in the meantime Roma tomatoes will do.

This is a filling meal with such fresh tastes from the tomatoes.  And the crust made with Creamy Potato Soup Health One Meal Replacement.turned out very tasty and crisp.  The key was spraying the olive oil spray on the dough before placing the cheese and tomatoes on.  The olive oil spray and the mozzarella created a barrier from the tomatoes which are primarily water. Without the barrier, the tomatoes would have caused a soggy crust...not good.

FYI - the leaves are fresh Greek Oregano from my garden!

Makes One Serving
Calories
Meal Replacement - 160 calories
Additives - 55 calories


Crust Ingredients:


  • 1 package of Creamy Potato Soup Meal Replacement
  • 2 teaspoons Flour
  • Salt to taste
  • 1 tablespoon Butter Buds - liquid
  • 1 tablespoon Cold Water



Crust Directions:

  • Mix dry ingredients
  • Stir in Butter Buds
  • Slowly add Cold Water till dough forms a ball
  • Knead a few times on a floured board
  • Roll dough out to a 6 inch round
  • Place dough onto a baking sheet covered with parchment paper that has been sprayed with Olive Oil cooking spray
  • Spray top of dough with Olive Oil cooking spray


Topping Ingredients:

  • Sliced Tomatoes - I used 1.5 ounces
  • 2 tablespoons Fat-Free Mozzarella
  • Salt to taste
  • Sprinkle of Dried Oregano





Topping Instructions

  • Sprinkle Fat-Free Mozzarella in center of dough (approximately 2 inches from the edge)
  • Place Sliced Tomatoes on top of the Mozzarella
  • Fold up edges
  • Sprinkle with Salt
  • Sprinkle with Dried Oregano
  • Spray with Olive Oil cooking spray



Bake at 350 for 15 minutes
