Raspberry Lemonade Freeze with Health One Meal Replacement

Weekly shopping today. Checking out the produce department. I looked around and what was smiling at me? Raspberries! Of course, they have been shipped in. My preference is always to buy local.  But they looked so yummy; and, it is still too early for raspberries in Oregon. So I bought them.

Now, what to make?  How about the flavors of raspberries and lemon combined? The result? Raspberry and Pink Lemonade Freeze with Health One Meal Replacement. Oh my goodness - talk about a tangy and refreshing treat with a vanilla cookie crust! Summertime just doesn't get any better. This will definitely be a regular around my home when raspberries are ripe!

Meal Replacement - 160 calories
Additives - 75 calories

Crust Ingredients:

  • 1/2 package Vanilla Health One Meal Replacement
  • 2 teaspoons Flour
  • 1 teaspoon Splenda
  • 1 tablespoon Butter Buds (liquid)


Crust Directions:

  • Mix dry ingredients
  • Mix in Butter Buds - dough should be crumbly









  • Press into bottom of 4-inch round springform pan (mine is made by Wilton)
  • Bake at 350 degrees for 5 minutes
  • Place in fridge to cool


Filling Ingredients:

  • 1/2 package Vanilla Health One Meal Replacement
  • 1/2 teaspoon Sugar-Free Raspberry Jello mix
  • 1/4 cup Boiling Water
  • 1/4 cup Cold Water
  • 1/3 cup Fresh or Frozen Raspberries




Filling Instructions:

  • Pour boiling water over Raspberry Jello mix - stir with a whisk till gelatin is dissolved
  • Stir in cold water
  • Whisk in the rest of the Vanilla Health One Meal Replacement
  • Place mixture into fridge till it begins to thicken




  • Once thickened, fold in raspberries and pour over crust. Set a few raspberries aside to use to top the "freeze"
  • Place in the freezer till frozen
  • Once frozen - remove from springform pan and place the "freeze" onto a serving plate






Topping Ingredients:

  • 2 tablespoons Fat Free Whipped Topping
  • A sprinkle of Crystal Light Pink Lemonade Mix
Topping Instructions:

  • Place whipped topping into a bowl.  Sprinkle just a bit of the dry lemonade mix. Blend in. Taste. 
  • You may want to add a bit more...but be careful. The last thing we want is whipped topping that is too tangy to eat

  • Top the "freeze" with the flavored whipped topping 

  • I put the topping into the corner of a plastic sandwich bag, snipped off the corner and piped the topping onto the freeze"







  • Top with the remaining raspberries
  • If you have it...add a mint leaf!
  • Serve immediately
