Frozen Chocolate Peanut Butter Cheesecake with Health One Meal Replacement

When my oldest son was just a little guy he liked so many different healthy foods. Even "grown-up" vegetables like beets or brussel sprouts - he would at least try. An accomplishment for anyone, let alone a three year old. The one exception? Peanut Butter! I have never understood it and I still don't. How can someone not LOVE or at least like peanut butter?

One of my favorite foods is peanut butter. I just love it! The tough thing is that peanut butter loves me back, with it's high fat content and calories. When I started reading labels and checking out nutritional values, I was shocked with peanut butter. Two tablespoons of creamy peanut butter is 160 calories. The fat count in those two tablespoons? 140 calories. Now add chocolate into the equation (which come on...most of us have) and you have a calorie and fat content disaster.

Enter PB2 Powdered Peanut Butter. An amazing product made by Bell Plantation! If you haven't heard of PB2 - check it out! In a "nutshell" - Bell Plantation removes over 85 percent of the fat from peanuts, leaving a powdered peanut butter. At only 45 calories for two tablespoons of PB2 powder - you can't go wrong. Many folks mix PB2 with water (two tablespoons PB2 to one tablespoon water) to make a peanut butter spread. My favorite way to use PB2 is to include it in recipes. The rich peanut flavor goes a long way, so rarely do I use even one tablespoon of PB2 powder in a recipe.

Today's recipe is a Frozen Chocolate Peanut Butter Cheesecake with Health One Meal Replacement. And for the peanut butter?  PB2 of course!

Recipe is for Two Servings
Calories per Serving:
Meal Replacement - 160 calories
Additives - 77 calories

Crust Ingredients:


  • 1 Vanilla Meal Replacement
  • 2 tablespoons Graham Cracker Crumbs
  • 4 teaspoons Butter Buds (liquid form)


Crust Instructions:


  • Mix Meal Replacement and Graham Cracker Crumbs.
  • Add in Butter Buds till the crust ingredients are crumbly but will stick together when pressed.







  • Press the crust mixture into the bottom of a springform pan.  I used two mini springform pans (approximately 4 inches each) made by Wilton that I purchased through Amazon.  One was round and one was heart shaped.  You could also use one 6 or 8 inch springfrom pan for the entire recipe.
  • Place in the freezer.


Filling Ingredients:

  • 1 Chocolate Meal Replacement
  • 1/2 cup Water
  • 1 tablespoon Chocolate Pudding
  • 1 tablespoon PB2
  • 1 tablespoon Fat-Free Cream Cheese
  • 1/4 cup Fat-Free Whipped Topping

Filling Instructions:

  • Mix Meal Replacement, water, pudding, PB@ and fat-free cream cheese.  I use my Bella Rocket Blender - basically a Magic Bullet to mix the ingredients.
  • Pour mixture into a bowl.
  • Fold in fat-free whipped topping.




  • Pour over crust in springform pan.
  • Place back into freezer till frozen.
  • Remove from springform pan.
  • For serving I placed little drops of sugar-free chocolate syrup around the frozen cheesecake.
