Watergate Pie with Health One Meal Replacement

My sister loves Christmas. Everything about Christmas! She has even been known to celebrate Christmas in July! Growing up, we had many  favorite holiday foods. But in the early 1970's a new treat began to show up on tables across America. Watergate Salad!

Many of you may remember Watergate Salad as a food staple of holiday and family get-togethers. It was green, fluffy, pistachio flavored with marshmallows and pineapple. Honestly, I never knew why it was called a salad...since the only "salad" type thing in it was the pineapple. And Watergate? Who knows how it obtained that moniker. Maybe it was an effort to lighten the tone of the nation after the Watergate Scandal.  Whatever the reason for the name - I do know that I liked it...a lot! So, I thought I would try to make it using Health One Meal Replacement.

Two Servings
Calories per Serving:
Meal Replacement - 160 calories
Additives - 60 additives


Crust Ingredients:

  • 1 Vanilla Meal Replacement
  • 1 tablespoon Splenda
  • 2 teaspoons Flour
  • 1 tablespoon Butter Buds (liquid)


Crust Instructions:

  • Mix dry ingredients.
  • Blend in Butter Buds with a fork.
  • With your fingers - lightly work the ingredients till it becomes sandy (see picture above).
  • Press into pie pan - I used a medium sized pie pan approx. 7 inches across. 
  • Bake at 350 degrees for 5 minutes.
  • Cool.



Filling Ingredients:

  • 1 Vanilla Meal Replacement
  • 1 tablespoon Sugar-Free/Fat-Free Pistachio Pudding mix (dry)
  • 1/2 cup Cold Water
  • 1/2 cup Frozen Pineapple Tidbits (by Dole - they come in single-serving packages with no juice or added sugar)
  • 10 mini-marshmallows
  • 1/4 cup Fat-Free Whipped Topping

Filling Directions:

  • Mix Meal Replacement and Pistachio Pudding.
  • Blend in Water till smooth - I used a whisk.
  • Place pudding mixture in fridge to thicken.
  • Using kitchen scissors or a paring knife - cut Miniature Marshmallows and Pineapple Tidbits in half.
  • Mix Miniature Marshmallows and Pineapple Tidbits into pudding mixture.
  • Fold Whipped Topping into the pudding mixture.
  • Pour into crust.
  • Freeze.
  • To serve, remove from freezer and let set a few minutes before cutting.

NOTE: Because this recipe does not include regular whipped cream or milk, the consistency is not "fluffy" like regular Watergate Pudding. Freezing "sets" the filling.
