Back to Basics - Peaches and Cream with Health One Meal Replacement


Some of the Back to Basics recipes are the best...easy and with minimal or no additives. I learned about this quick and easy recipe by watching one of the many Health and Nutrition Technology's instructional videos on YouTube. If you haven't checked out their videos you're definitely missing out on some GREAT ideas!

This is a recipe for Peach Cobbler. But it is so creamy that I always call it Peaches and Cream! It is wonderful for a warm breakfast. I also keep all the ingredients at work for a speedy meal. Without fail, whenever I whip up some Peaches and Cream in the break room, someone will come up to ask me what I am making...it smells that good!

Calories - One Serving
Meal Replacement - 160 calories
Additives - 25 calories

Ingredients:

  • 1 Vanilla Meal Replacement
  • 1 single serving cup of Unsweetened Peaches (check the calories on the peaches - different brands have different calories. Del Monte is 25 calories)
  • Cinnamon to taste
  • Optional - Splenda


Instructions:

  • Place the Meal Replacement into a bowl or ramekin.
  • Mix in the Unsweetened Peaches - including the juice - this will serve as your liquid.
  • At this point, I like to mix in some cinnamon - because I LOVE cinnamon. You may wish to wait and just sprinkle some cinnamon on top.
  • Microwave for 2 minutes - NOTE: while microwaving the batter will rise - so make certain that your ramekin or bowl is deep enough to accommodate the rising.
  • Remove from the microwave - the bowl will be hot and the volume of the Peaches and Cream will fall.
  • Sprinkle with cinnamon.
  • Optional - sprinkle with Splenda - I find that it is sweet enough without the Splenda.
