Blackberry Cobbler with Health One Meal Replacement

While the rest of the United States has been sweltering - Oregon has been cool. Sometimes down right chilly. But over the last few days, all of that has changed. As the temperatures rise, the local fruit is finally ripening. HOORAY!

Yesterday while visiting the farmer's market I was brought face-to-face with some "amazon" blackberries. Well not really "amazon;" but they are HUGE. Of course, I purchased some to make a Blackberry Cobbler. The recipe is easy and the result? Well...wonderful!


One Serving Calories
Meal Replacement - 160 calories
Additives - 55 calories

Filling Ingredients:

  • 1/2 cup Blackberries
  • 1 tablespoon Splenda


Filling Instructions:

  • Sprinkle Splenda over Blackberries - stir.
  • Set aside to let the Splenda begin to draw the juice from the Blackberries.


Crumble Crust Ingredients:


Crumble Crust Instructions:

  • Mix dry ingredients.
  • Blend in Butter Buds with a fork.
  • With your hands, gently begin to work the crust ingredients till it becomes the consistency of sand.
  • Set aside.

Final Instructions:

  • Pour Berries into a small casserole dish.
  • Smash Berries a bit to draw more juice and to ensure that the berries cover the bottom of the casserole dish.

  • Sprinkle the Crumble Crust over the berries.
  • Bake at 350 for 10-12 minutes - be sure to watch. When crust is turning brown it is done.
